- Heat 4 tablespoons of oil or ghee in a pan over medium heat.
- Add the roasted spices to the pan and sauté for a few seconds.
- Add the onions and sauté until they turn transparent.
- Add the tomatoes and cashew nuts after the onions turn translucent.
- Add the mint leaves, coriander leaves, and green chilies to the pan and stir for a minute.
- Add the ginger and garlic paste to the mixture in the pan and sauté for a couple of minutes.
- Add 2 teaspoons of garam masala, 3 teaspoons of chili powder, and the mixed vegetables to the pan and sauté for a few more minutes.
- Pour in 8 cups of water and add salt to taste.
- Add the soaked rice to the boiling water and pour in the lemon juice.
- Cover the pot with a tight lid and let the rice cook until done.
